Steps:
- Make the crust: Mix flour, sugar, and salt. Add butter until it resembles damp sand, then add cream. Chill the dough for 3-4 hours. Roll it out, fit into a tart pan, and chill for an hour.
- Bake the crust: Preheat to 375°F, poke holes in the crust, and bake with weights for 10 minutes. Remove weights and bake another 5 minutes.
- Make the almond cream: Beat together almond flour, butter, sugar, eggs, almond, and vanilla extracts until smooth.
- Assemble: Spread almond cream into the parbaked crust and bake at 350°F for 10-12 minutes.
- Decorate: Let the tart cool, then arrange raspberries on top. Brush with melted jelly for a shiny finish.
- Serve: Chill, then bring to room temperature before serving. Optionally, add ice cream (we're using Jude's!)
